Sourced from vineyards in the Derwent (85%), North West (7.5%), and Coal River (7.5%) Valleys. 85% was whole-bunch pressed, while 15% was cold-soaked on skins for five days. All parcels were naturally fermented in oak (15% new), with full malolactic fermentation during six months of lees maturation. Bottled unfined and filtered.
