Dr Edge Tasmania Pinot Noir is a blend of Derwent Valley (70%) & Tamar Valley (30%) fruit. It sees whole cluster inclusion and is foot stomped. The maceration occurs across each parcel before blending to Peter Dredge's house style. Natural yeast (Pied de Cuve method) ferments the grapes which are pressed to old oak casks to lay low for 9 months before bottling without filtration or the use of fining agents.
