Domaine Paul Nicolle is located in the village of Fleys which sits four kilometres east of the main township. Their Vieilles Vignes Chablis Paul is the style your mind conjures when someone says Chardonnay from northern Burgundy; clean, fresh, and quietly stunning. 30-40-year-old vines growing from limestone soils produce tantalising grapes just asking for a little malolactic fermentation. Raised on lees for 8-12 months, pretty blossom notes, a chalky minerality and aromatic orchard fruit underpin fresh citrus and luscious honey.
