This sauce starts with the delicious sour/sweet flavours of blood plum, then adds in the fermented flavours of Korean Gochujang, the sweetness from currants and finishes with the peppery spiciness and heat of peri-peri chillies. The resulting sauce is skin to an Asian-style plum sauce - without the sweetness, to let the other flavours shine through.
