A short spell on skins (around two weeks) brings texture and grip, giving the wine a gently chalky, almost pithy edge that keeps things interesting. Stainless steel and seasoned oak work quietly in the background, rounding things out without dulling its natural vibrancy.

In the glass, it’s all white florals, green apple crunch and preserved citrus — underpinned by a savoury, oceanic salinity that feels purpose-built for seafood. There’s a flicker of phenolic grip, a little citrus pith, and a mouth-watering acidity that keeps you coming back for another sip.

This is lo-fi, modern Australian white wine at its most drinkable: textured but refreshing, playful yet precise.
