Organically farmed Chardonnay and Riesling whole bunch pressed and co-fermented in old puncheons. Aged 12 months in barrel before being bottled and aged in bottle for another 12 months before being disgorged. Beautiful fine bead, incredibly aromatic, refreshing acid - the ultimate oyster wine!
