Keeper Brewing out of Brunswick East, Melbourne, make one beer. That's it. Every fermentation tank in the building is full of the same thing — their Pilsner — and that's exactly the point.
Founded by father-and-son duo Phil and Harry Sexton (Phil being the original founder of Matilda Bay) alongside Andy Dunn, Keeper was born out of a pretty clear-eyed frustration with the Australian brewing industry — where two Japanese-owned giants control close to 90% of all beer sold in the country, snapping up craft breweries along the way. Keeper's response was to go the opposite direction: one brewery, one beer, fiercely independent, no additives, no preservatives, no filtration, no pasteurisation.
The Pilsner itself is a German-style, slow-brewed over 12 weeks with Saaz hops. Crisp, clean, and refreshing — exactly what a great Pilsner should be. The focus of an entire brewery on a single recipe shows.
