From the edge of the earth and the edge of convention comes the Dr Edge Tasmania Chardonnay — a cool-climate weapon built from Derwent Valley (60%) purity and Tamar Valley (40%) tension. Tasmania doing what Tasmania does best: electric fruit, saline edges, and zero excess.

Hand-picked fruit goes straight to work — direct pressed into 1,000L clay amphora and seasoned oak for wild fermentation. No lab yeast, no heavy-handed oak gloss. Around 10% whole Chardonnay clusters rest in the clay, building grip and texture without turning the dial toward lumberyard. Nine months on lees for shape and quiet power. Bottled without fining agents. Nothing taken away that shouldn’t be.

On the nose: punchy and alive. Grapefruit pith, lemon curd, white peach, talc and crushed stone, with a faint cashew hum underneath.

On the palate: tight and tensile. Citrus leads — lemon peel and white nectarine — chased by a salty brine note and a mineral spine that pulls the wine long and fine. It’s coastal, it’s precise, it’s built with intent.
