Made from 100% Palomino Fino grapes from a Sanlúcar vineyard with vines between 55 and 85 years old located in Pago Miraflores La Baja. The 2021 vintage was fermented in a stainless steel tank and then transferred to the winery casks in which it aged under a veil. After fermentation, it was aged under flor yeasts for six months. In May 2022, the wine was removed from the casks and transferred to a stainless steel tank where, still under the subtle influence of flor, it remained until it was bottled in June of the same year.

The resulting wine is something utterly unique and intriguing. There is a roundness and floral charm to the wine, as well as plenty of the oyster shell/iodine salinity that you expect of Sanlúcar wines. There are some waxy, complex, reductive and secondary notes from the time aging under flor and also some gentle nuttiness from the sherry cask.
