Pierre-Yves Colin-Morey Bourgogne Hautes-Côtes de Beaune Blanc is an acclaimed, high-altitude white Burgundy wine made from Chardonnay grapes by the benchmark producer Pierre-Yves Colin-Morey (often abbreviated as PYCM).
Many of PYCM's grapes for this bottling come from a high-altitude hillside parcel (around 400 to 420 meters up) in En Creuzilly near Cormot, sometimes designated as "Au Bout du Monde" (At the Edge of the World).
Pierre-Yves uses no lees-stirring (batonnage), native yeasts, and aging in larger oak casks (demi-muids or foudres) without fining or filtering, creating a precise, tense, and age-worthy style even at the regional Bourgogne level.
