Cantillon Iris is a unique, amber-colored, spontaneously fermented ale (6.5% ABV) from Brasserie Cantillon in Brussels, distinct for being brewed with 100% pale malt instead of the traditional lambic wheat blend. It features a complex profile of intense sourness, oaky notes, and significant bitterness, achieved through a 50/50 mix of fresh/aged hops and "cold hopping" with fresh hops before bottling.
