This was formerly the Cab Mac Syrah, and it’s still the same playful style under a new name. Whole bunches are sealed under CO₂ for two weeks of carbonic maceration, then basket pressed into seasoned barrels for six months. The result is lifted raspberry cordial and boysenberry jam, a juicy palate of berry coulis and redskins, soft tannins and crisp acidity. Serve it lightly chilled as a summer red.
