‘Cassiodorus’ is a celebration of Amarone, and a true labour of love. Before being hand-picked, Cabernet Sauvignon grapes are cane-cut and then left to dry on the vine. The result is a rich, powerful and complex wine best described as ‘an iron fist in a velvet glove.’
