An acclaimed, cool-climate white wine produced by Michael Dhillon under his DHILLON label by Bindi in Victoria, Australia. Grown on ancient granite-rich sandy loam soils at roughly 450 to 460 meters above sea level from vines that are nearly 30 years old. Wild-yeast barrel fermentation in French oak (roughly 30% new) with 10 months of aging on full yeast lees.
