The Ellis family have been running their sheep farm and stewarding these vineyards in Derwent Valley, Tasmania since 1976. Nowadays, their daughter Mardi Ellis will be its custodian for future generations. The fruit for their sparkling program comes from a slightly cooler block compared to their still Chardonnay, the Far Horse Vineyard Block. Incredibly, this has been aged on lees for 5 years before disgorgement, with low dosage at 3g/L. It offers elegant and delicate flavours, creamy texture, and good length!
