Made from regeneratively farmed Cabernet grapes off Minim's own Metcalfe vineyard, hand-picked early for bright acidity and direct-pressed for a natural ferment, with a portion barrel-fermented in seasoned puncheons. More a nod to Provence in style than varietal mix, it offers soft red fruits and a gentle touch of Christmas spice, with decent palate weight and a light grip of skin tannin. A thoughtful, food-friendly Rosé built on Minim's regenerative viticulture ethos.
