Unlike heavy, fruit-forward California reds, Scallop Shelf focuses on high natural acidity, lower alcohol, and structured elegance shaped by Pacific Ocean fog and cool winds.

Primarily made from the Pommard clone (roughly 60%), blended with selections like Dijon 115, 777, Swan, and Mount Eden. Medium-bodied, tension-driven, and aromatic. It features notes of blood orange, pomegranate, red and blue fruits, pine needles, saline mineral character, and savoury spices.
