Théo Dancer Bourgogne Aligoté is a celebrated white wine made by rising-star winemaker Théo Dancer, son of renowned Chassagne-Montrachet vigneron Vincent Dancer. Fermented naturally with native yeasts and zero bâtonnage (lees stirring). Aged on its lees, then settled in stainless steel. Features notes of preserved lemon, green apple, white peach, crushed chalk, and smoky reduction with a bright, saline, mineral-driven finish. A sneaky amount of malo in this perhaps!
