Clayface Cabernet is purely made in amphora. Hand harvested grapes then destemmed into Italian Amphora. Plunged daily by feet & hand then sit to macerate on skins for 5 months. Basket pressed off skins back to Amphora to allow to settle before hand bottling on a bright sunny fruit day.
