Picked on April 28th, the fruit was whole bunch pressed, put to old oak and naturally fermented. A typical long slow fermentation extended out to 103 days before they called a halt as the sugars and acidity found the balance they were after. Matured on lees through to late Spring before filtering and bottling. 

2112 bottles produced.
