Billecart-Salmon Brut Le Sous Bois is a complex, non-vintage champagne from France that is entirely vinified and aged in oak casks.

"Sous bois" translates to "underwood" or "underbrush", pointing to the earthy, rich, and wooded profile created by oak barrel fermentation.

Made from equal parts (or very close proportions) of the three main Champagne grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier sourced from premier and grand crus. Aged on its lees for about five years before release.
