The NU is naturally fermented from entirely organic fruit and matures through a specialized aging regimen: two months in large Austrian oak casks, followed by two months in steel and clay vessels, before being bottled in a 1-liter format.

The resulting wine is vibrant and agile packed with notes of sour cherries alongside a harmoniously balanced level of tannin - retaining a classic Piedmontese character.
