Tim Fearon spent nine years making wine at Vasse Felix before setting up his own label in the Ferguson Valley. The fruit comes from 25-year-old vines on the Hillsedge vineyard. It’s wild fermented, basket pressed and aged in seasoned oak, then bottled unfined and unfiltered.

Mulberry and cassis lead, with red forest berries and savoury bay leaf and sage. The palate is juicy blackcurrant and raspberry on fine-grained tannins. Think of it as a modern take on classic Aussie claret: medium-light bodied with minimal oak. Made for Sunday roast!
