BRASH HIGGINS - BLOOM
The 2017 BLOOM, the fourth incarnation since the original 2008 version, is a slowly-aged Chardonnay made in a style inspired by the “sous voile”, or “under-the-veil”, oxidative methods found in France’s Jura and Burgundy regions. Here, McLaren Vale Chardonnay from the sandy Blewitt Springs sub-region has been matured for seven years in selected white Burgundy barrels, periodically adding some fresh white wine to feed the "flor" (flower) or "veil" that grows as a natural, healthy protective barrier of yeast on the wine’s surface. In the last five years, the barrels were turned on their side to prevent tampering (or sampling, as the winemaker is known to do) and to provide an air-tight seal. No topping was done during this final ageing period. The wine is then aged in a steel tank for an additional 6 months before bottling.
The result is an Australian Chardonnay like you've never had before. Golden in hue, there is Calvados, toffee apple, vanilla bean and honey on the nose. The palate follows this theme, with a boozy dessert-like edge. Think Rum Baba and Frangipane coupled with lively sea spray and nutty notes. A truly unique and delicious wine to experience.
