Grown in clay soil with limestone in the slopes and lots of gravel on the terraces, this wine comes from 40 to 50 year old vines of Grenache and Syrah. The grapes are hand-harvested and crushed, then undergo a 2 to 3 day cold maceration. A traditional style of fermentation follows and lasts about 20 to 30 days with daily delestage. About 30% of the resulting wine is aged in 1 and 2-year old barrels for 6 to 12 months while the other 70% is aged in stainless steel vats. Yields about 35 hL/ha..
