Distillerie Lemercier was founded in 1811 by the Lemercier family in Fougerolles, eastern France, and has been producing absinthe for generations. This expression follows the distillery’s original recipes. Wormwood, mugwort, fennel, green aniseed and star anise are macerated and distilled, then rested for nine months before bottling. Wormwood and mugwort give a gently bitter herbal backbone, while fennel and green anise add soft, aromatic sweetness, with less anise than many classic absinthes.

Prepare it the traditional way: slowly drip chilled water over a sugar cube and watch it louche into a pale, opalescent green. Balanced, approachable and steeped in French tradition.
